Grammy's Chocolate Cookies (Revised)





As you will soon find out, I am always looking for a good recipe to make better. Better as in healthier. Recently I came upon Martha Stewart's Cookies at our library and the fun has begun! Tonight I made "Grammy's Chocolate Cookies" with a few omissions/substitutions, and WOW were they good. We (my four children & I ) tested the cookie dough and were considering not baking them because the dough was so good we didn't want to ruin it. Well, in the end we were not disappointed, although I highly recommend enjoying the dough beforehand also. Here is my revised recipe:

1 c. unbleached flour
1 c. + 2 Tbsp. whole wheat pastry flour
3/4 c. cocoa powder
1 tsp. baking soda
1/2 tsp. salt
1 1/4 c. (2 1/2 sticks) unsalted butter, room temperature
1 1/2 c. sucanat
2 large eggs
2 tsp. pure vanilla extract
Turbinado sugar, for rolling

Sift together flours, cocoa powder, baking soda, and salt into a bowl. In the bowl of an electric mixer fitted with the paddle attachment, beat butter and sucanat on medium speed for about 2 minutes. Add eggs and vanilla, and beat to combine. Form dough into a flattened disk, wrap with plastic wrap, and chill until firm, about 1 hour (or 25 min. in the freezer for the impatient ones). Preheat oven to 350 F. Shape dough into 1 1/4-inch balls. Roll each ball in Turbinado. Place on baking sheets lined with parchment paper or using stoneware works great too. Bake until set, 10-12 minutes. Transfer cookies to a wire rack until cool and enjoy!
